The same reason we do, to hold things and open them. And use tools!

If this thing were a predator I might see your point. But all it has eaten is grass and flowers thus far. Why would

....I hope that's not an indication that it's evolving to be a predator....

Fortunately it appears to be content with the grass for now.

It attempted to swat another creature away just now. It may be more territorial than your usual horse.

That is fortunate. If it wanted to become a predator it might be a real handful if it's learned to use tools for it's territory.
